I will be making scallops on NYE, and typically fry them for a few minutes in a Wild Tree scampi mix and they usually turn out great.
Anyone have any recipe suggestions? This will go with tenderloin and a baked tater!

Cook first in butter, salt, pepper.
Then glaze / fire them in a jerk or Cajun seasoning.
Pablo's wifey loves scallops. Every time I made them when they'd come over for dinner, he's report back that he go laid. And lemme tell ya. That's a tough task to nail. Scallops did it every time.

Saute them in butter with a little chopped fresh tarragon. When they're almost finished, add a half cup each of sherry and whipping cream. Bring it back up to temp and serve over thin slices of toasted french bread. nom nom.
