So me and bigslickwood are playing cards with 5 other guys, and bswood brings these things called buffalo turds - shit they are good. Cards flying, food great and lots of alcohol. Bswood says hi!

I took this awesome pic of Oz standing there, shocker in one hand, drink in the other, cards in front of him and pr0n on the big screen behind him....

Fun night. Managed to leave up a few bucks. The old-school pass-the-deck type games are a lot of fun, and a welcome break from the straight-up, grind it out for hours, holdem tourneys we usually play...

I may have made a huge mistake. When I made them this time, I chopped up the seeds and membrane from the jalapeno's and added them back into the stuffing so that there would be more heat than the last time I made these. It worked. Oz can attest that there was a good bit of heat in this batch.
Here's my mistake. There was stuffing left over. I put it in the fridge. For some reason, this morning, it seemed like a good idea to re-heat that stuffing, and eat it with Doritos. It got hotter overnight. Much hotter. I'm sitting here with sweat on my brow, tears leaking out of my eyes, and what feels like blisters in my mouth. There's a rumbly in my tumbly that makes me afraid I'm about to imitate a volcano - with liquid hot magma shooting out of the scorched and devastated crater that was once my bunghole. If I'm not back in a couple hours, you know what happened.

Yes those fuckers were hot as he'll - and volcanic eruption is inevitable! I speak from experience - but wholly shit those are good! Definitely making some less as many seeds for Christmas eve!

I think we had some general recipes for them in a different thread (and I just modified Bratwursts original recipe a bit), but here goes. I made about 34 of them or so, and still had some filling left, so I'll just put down what I did, and you can adjust amounts as needed.
17 jalapeno peppers. Stems removed, cut in half the long way, and seeds and membranes scooped out with a spoon. Save the innards, depending on how hot you want things to be. If you scoop them all out and get rid of them, a 3 year old (or my wife) could eat these just fine. If you chop them up and put them back in the filling, they'll make your ass feel like Vesuvius.
For the filling:
1 lb. italian sausage crumbled and browned
2 pkgs. cream cheese
2 cups (or however much is in one of the smaller pre-shredded bags) shredded cheddar/jack cheese
1/2 red onion, chopped fine
1 cup or so of frozen corn. Cook the corn and onion together until the onion is soft.
2 Tbs. BBQ rub. (you could probably use whatever you want for seasoning)
salt and pepper
as much of the jalapeno innards as you want to add, chopped fine.
For the wrapping:
1.5 lbs. thick cut smoked bacon (this was about 18 pieces) Cut the bacon pieces in half.
In a big ziplock bag, mix about 1 cup brown sugar, some black pepper, and about 1 tsp. (or to taste) of cayenne pepper. Add the bacon to the bag and toss until all of the bacon is evenly coated. The first time I did this I dredged each individual piece in the brown sugar, but was surprised at how well just tossing it in the bag worked this time.
Take a pepper, spoon in some filling and then wrap with the bacon. If you start the bacon on the filling side, and wrap at an angle like a candy cane, the bacon will just wrap around the back side and then cover the other half of the filling, so most of the filling gets enclosed by bacon. It's sloppy at first, but things hold up surprising well as they cook. You can hold things together with a toothpick if you want, but I didn't on this second batch and it worked fine.
I put them on a rack, and then put the rack on top of another pan, so that the rack was suspended a bit and any grease would fall through into the pan, but the turds wouldn't be sitting in the grease. You could either cook these in a smoker for a couple hours, or I just put them in the oven this time at 325 or so for about an hour. Just keep an eye on them and pull them whenever the bacon is as done as you like it. If they're on a rack, get them off of the rack as quick as you can, because once they're out of the heat, the sugar on the bacon will cool and start to harden just a bit. Enough to make them tough to get off the rack...

I smoke these thing pretty often. A couple of years ago I posted these pics over on the other forum.
This is not nearly as elaborate as Bigslickwood's recipe.
Hull out jalaps,
stuff in a hunk of cream cheese,
set a little smokie on top,
wrap in bacon...toothpick to hold then smoke those bad boys a couple of hours.
