I've never cooked individual portions of ribs before. Do you just decrease the time over the heat? I'd be afraid of them cooking too quickly / drying out.

B.A. grill too. It would be fun to have a party w/ that thing full of dead animal.

would you think less of me if i told you i cheated?

i didn't have the time or patience to smoke a rack of ribs for 4-6 hours so, i boiled them first, then finished them on the grill. i'd say they went from the butcher's shelf to the plate in just under 2 hours.

i cut them into thirds so they will fit in the biggest stock pot we have snd boiled in apple juice, quartered red onions and water for 45 mins-1 hour. then laid over hot coals and covered with barbecue sauce for about 10-15 mins on each side to glaze them.

first run, i used a full chimney which resulted in too much heat and burned the bone side on several of them. Second try, i used half a chimney of coals and still too hot. Next go round will be 1/3 chimney full of coals and see how that does.

so, far, i've been able to get three full racks on one kettle. haven't cooked anything in the right hand kettle yet....

It's not cheating... Just quickening up the process.

I've boiled ribs before but didn't like the outcome. Do they take on much smoke when boiled, or are you just basically caramelizing the BBQ sauce?

Mainly caramelizing the sauce, and depending how long it's left over the hot coals, creating a little smokey "bark"
